Some of the most popular South Indian breakfast foods are idli, dosa, Pongal, poori etc. But, we all will probably agree that the same dishes every morning can be boring at times. We handpicked a classic South Indian breakfast meal that will not only satisfy your soul but will also fill you with protein, fibre, carbohydrates and several essential vitamins and minerals with the very first meal. It is nothing but Kerala’s famous combo – puttu and kadala curry. For the unversed, South Indian cuisine has garnered a huge share of the fan base across the country for being simple, healthy and flavourful. Most of the dishes (both veg and non-veg) are easy to make and need minimum ingredients in the recipe. And if you explore, you will find every region of South India has multiple unique dishes that never fail to impress our taste buds. One such dish surely is kadala curry, which is best enjoyed with puttu.

HOW OUR FLOUR IS MADE?

✅Rice is thoroughly washed and soaked for 4 to 5 hours.

✅Water is drained and soaked rice is shade dried until the water gets completely dry.

✅The rice is ground to a coarse powder and dry roasted for an hour to bring an excellent aroma and taste.

✅The dry roasted flour is transferred to large trays to cool down and it’s packed fresh and delivered to your doorsteps 😍

PUTTU METHOD:

✅Take 1 cup puttu flour in a mixing bowl or a pan.

✅Take 1 cup puttu flour in a mixing bowl or a pan. Mix very well.

✅Now sprinkle ⅓ cup water all over little by little. The amount of water required will depend on the texture of the rice flour. So you can add/reduce the water accordingly.

✅Begin to mix the rice flour with water with your fingertips and give a good mix.

✅To get soft puttu, the amount of rice flour to water ratio is important. To check this gently press a small portion of the flour between your palms. It should form a lump. When you press this flour lump more, then it breaks and crumbles. This should be the texture of the flour.

✅Break all the tiny lumps in the flour with your fingertips. You can even grind this rice flour mixture in a grinder to break lumps. But grind in small batches and use the pulse option of the mixer-grinder.

✅Now pour 2 to 3 cups water into the base vessel of the puttu kudam / cooker. Keep on the stovetop and let it get heated.

✅Meanwhile, first, place the perforated disc inside the cylindrical puttu-making vessel. Then add 2 to 3 tablespoons of fresh coconut in the cylindrical vessel of the puttu kudam and spread evenly.

✅Then gently add the puttu flour till it reaches half of the cylindrical vessel. Don’t press the flour, it should be loosely packed.

✅Then again layer with 2 to 3 tablespoons of grated coconut and spread evenly. Then add the puttu flour again.

✅Cover the top portion with 2 to 3 tablespoons of grated coconut and spread evenly. Cover the top with the lid.

✅Place the cylindrical portion on top of the base vessel/cooker in which the water must have come to a boil.

✅Steam puttu on medium flame till you see steam releasing from the top vent of the cylindrical vessel. Then switch off the flame. It takes about 10 to 12 minutes normally.

✅Remove the cylindrical part from the base vessel/cooker and allow the puttu inside to cool for 3 to 4 minutes. Then using a wooden skewer or the stick that accompanied the puttu kudam, remove the steamed puttu.

✅Serve puttu hot or warm with kadala curry or veg stew or potato stew. It will also go well with South Indian chana masala. Also, serve some bananas and pappadums by side.
